Best Ever Coconut Bars

If you love toasted coconut, pecans, and bits of chocolate then these are the perfect guilt-free treat for you! These paleo coconut bars are super quick and so easy to make. My children are even obsessed with them!

Coconut, Pecans & Chocolate

They say everything is bigger in Texas, but smaller is better when it comes to these delicious bars! Fine shredded coconut, finely chopped pecans and mini chocolate chips are what will make you want to eat the whole tray!

I start by using a large, 8 cup glass measuring cup for this recipe. It makes for a super easy clean up! Add the coconut oil to the measuring cup and melt in the microwave starting with 30 seconds. The coconut oil doesn’t need to be hot, just slightly melted. Add in the shredded coconut, coconut sugar, pecans, eggs and vanilla. Mix well to combine, then add in the mini chocolate chips. Stir to combine.

Pre-heat your oven at 350 degrees the line a medium-large cookie sheet with parchment paper. Feel free to do this step before mixing together everything to save some time! When the cookie sheet is ready, use a spatula to evenly spread the mixture into an 8 by 12 inch rectangle. Place in the oven and bake for 12-14 minutes.

This recipe definitely falls under our TOP 5 Favorite snacks! We created this recipe several years ago when we started eating a Paleo diet and needed something to satisfy our sweet tooth. These are wonderful as a mid-day snack or sweet treat! AND can easily transition into cookie bites!

Equipment

  • Medium-Large Baking Sheet lined with Parchment Paper
  • Medium Size Bowl
  • Small pyrex measuring cup
  • Other measuring spoons and cups
  • Fork
  • Small Cookie Scoop (If you are making cookie bites!)

Ingredients
  

  • 1 1/4 cup unsweetened, shredded coconut
  • 1/3 cup Coconut Sugar
  • 1/4 cup Coconut Oil, melted I like to melt the coconut oil ahead of time in a small pyrex measuring cup.
  • 1 egg
  • 1 tsp Vanilla extract
  • 1/4 cup Chocolate Chips We prefer mini, but YOU DO YOU!
  • 1/4 cup Pecan pieces Optional

Instructions
 

  • Pre-heat your oven to 350 degrees. Line your baking sheet with parchment paper.
  • Melt the coconut oil in a 1 cup Pyrex measuring cup or other microwave safe dish.
  • In a medium size bowl, combine all of the ingredients and mix with a fork until well combined.
  • Spread out the mixture out evenly on the baking sheet until it is about 1/2 inch thick. At this point you can also use a 1 inch cookie scoop to turn the mixture into coconut bites!
  • Place in your oven and bake for 15 minutes or until the top and edges are golden brown.
  • Let the sheet cool before cutting into squares or triangles. The bars or bites are easily stored in a zip lock or air tight container for several days!
